Chili

Ingredients

  • 1 tbsp olive oil
  • 2 lbs lean ground beef
  • large yellow onion, finely chopped
  • 3 cloves garlic, finely minced,
  • 2 14.5oz cans of Rotel (1 mild, 1 hot)
  • 3 8oz cans of tomato sauce
  • 1/2 cup water OR beef broth
  • 2 tbsp chili powder
  • 2 1/2 tsp ground cumin
  • 2 tsp paprika
  • 2 tsp cocoa powder
  • 1 tsp granulated sugar
  • 1/2 tsp ground coriander
  • 15oz dark red kidney beans, drained & rinsed
  • 15oz light red kidney beans, drained & rinsed

Preparation

  1. Heat olive oil in a skillet over medium-high heat; add onion and saute 3 minutes, then add garlic and saute for 30 more seconds; Add onions and garlic to crockpot
  2. Brown beef in skillet; drain and add to crockpot
  3. Add tomatoes, tomato sauce, water or beef broth, and seasonings. Stir, cook on low heat for 5 to 6 hours
  4. Stir in kidney beans and heat for 10 minutes
