3 cups cheese of your choice, grated, I use a mix of pepper jack & monterey jack
a few splashes of chicken stock, optional
Preparation
Place onion, bell peppers, green chiles, cumin, garlic powder, salt, pepper, condensed soup and 1 cup of grated cheese together in a crockpot. Stir to mix well. Add chicken breasts and cover fully with mixture.
Cook on high for 3-4 hours or until chicken is fully cooked. Remove chicken breasts, chred and return to crockpot.
Pour in cooked spaghetti and remaining cheese. Toss to coat pasta in sauce and melt cheese, adding a few splashes of chicken stock where necessary to get sauce consistency you want. Cook for 20-30 more minutes on low.
