French Strawberry Cake

Ingredients

  • 1 1/3 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup unsalted butter (softened to room temp)
  • 1 cup granulated sugar
  • 1 1/2 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 lb fresh strawberries (sliced)

Preparation

  1. Preheat oven to 350 F
  2. Grease bottom and sides of a 9-inch pan
  3. Combine flour, baking powder, salt in a medium mixing bowl; whisk
  4. Cream butter and sugar with electric mixer until light and fluffy
  5. Add eggs, mixing each in individually
  6. Mix in vanilla
  7. Set mixer to low; add 1/2 cup of flour mixture
  8. Add sour cream
  9. Add remaining flour mixture; avoid overmixing
  10. Using rubber spatula, mix in 1 1/2 cups of sliced strawberries
  11. Spread cake batter into greased pan & smooth top with spatula
  12. Top with remaining strawberries
  13. Sprinkle with 1 1/2 tbsp granulated sugar
  14. Bake for 35 to 40 minutes, or until toothpick inserted into center comes out clean
  15. Place on baking rack and allow to cook completely
