French Strawberry Cake
Ingredients
- 1 1/3 cups all-purpose flour
- 1 1/4 tsp baking powder
- 1/4 tsp sea salt
- 1/2 cup unsalted butter (softened to room temp)
- 1 cup granulated sugar
- 1 1/2 tsp vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1 lb fresh strawberries (sliced)
Preparation
- Preheat oven to 350 F
- Grease bottom and sides of a 9-inch pan
- Combine flour, baking powder, salt in a medium mixing bowl; whisk
- Cream butter and sugar with electric mixer until light and fluffy
- Add eggs, mixing each in individually
- Mix in vanilla
- Set mixer to low; add 1/2 cup of flour mixture
- Add sour cream
- Add remaining flour mixture; avoid overmixing
- Using rubber spatula, mix in 1 1/2 cups of sliced strawberries
- Spread cake batter into greased pan & smooth top with spatula
- Top with remaining strawberries
- Sprinkle with 1 1/2 tbsp granulated sugar
- Bake for 35 to 40 minutes, or until toothpick inserted into center comes out clean
- Place on baking rack and allow to cook completely
