- Russet potatoes
Preparation
- Wash and peel potatoes
- Grate potatoes with box grater and season with salt
- Squeeze potatoes aggresively and rinse
- Place potatoes in towel and wring out excess water
- Heat skillet over medium heat, coat with oil
- Press potatoes into skillet, edge to edge
- Cook for 3 to 4 minutes; flip, and cook for 3 to 4 more minutes
- Season; repeat with remaining potatoes
