Keto Lemon Bars

Ingredients

Crust

  • 6 tablespoons butter
  • 2 cups fine blanched almond flour
  • 1/3 cup granulated sugar substitute
  • 1 tbsp freshly grated lemon zest

Filling

  • 1/2 cup butter
  • 1/2 cup granulated sugar substitute
  • 1/2 cup fresh lemon juice (5-6 lemons)
  • 1/4 cup grated lemon zest
  • 6 egg yolks
  • 1/2 teaspoon xanthan gum
  • 2 tbsp unflavored collagen powder OR 1 tsp unflavored gelatin

Preparation

Crust

  1. Preheat oven to 350 degrees
  2. Mix melted butter, almond flour, sweetener, and lemon zest until fully combined
  3. Press dough evenly along bottom and 1/2 inch up sides of an 8"x8" pan. For best results, line with parchment paper for easy removal
  4. Bake for 10 minutes
  5. Remove and cool while you prepare filling

Filling

  1. Melt butter; whisk in sweetener, lemon juice and lemon zest until dissolved
  2. Whisk in egg yolks and put over low heat
  3. Whisk until curd begins to thicken
  4. Strain into small bowl
  5. Whisk in thickening agents until dissolved and smooth
  6. Fill prepared crust
  7. Bake at 350 for 15 minutes
  8. Remove and cool
