Keto Lemon Bars
Ingredients
Crust
- 6 tablespoons butter
- 2 cups fine blanched almond flour
- 1/3 cup granulated sugar substitute
- 1 tbsp freshly grated lemon zest
Filling
- 1/2 cup butter
- 1/2 cup granulated sugar substitute
- 1/2 cup fresh lemon juice (5-6 lemons)
- 1/4 cup grated lemon zest
- 6 egg yolks
- 1/2 teaspoon xanthan gum
- 2 tbsp unflavored collagen powder OR 1 tsp unflavored gelatin
Preparation
Crust
- Preheat oven to 350 degrees
- Mix melted butter, almond flour, sweetener, and lemon zest until fully combined
- Press dough evenly along bottom and 1/2 inch up sides of an 8"x8" pan. For best results, line with parchment paper for easy removal
- Bake for 10 minutes
- Remove and cool while you prepare filling
Filling
- Melt butter; whisk in sweetener, lemon juice and lemon zest until dissolved
- Whisk in egg yolks and put over low heat
- Whisk until curd begins to thicken
- Strain into small bowl
- Whisk in thickening agents until dissolved and smooth
- Fill prepared crust
- Bake at 350 for 15 minutes
- Remove and cool
