Shortcake

Ingredients

  • 2/3 cups sugar
  • 1/4 cup butter (half stick)
  • 1 large egg, room temp
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 cup whole milk

Preparation

  1. Preheat oven to 350 degrees.
  2. In a bowl, cream sugar and butter. Add egg and vanilla; beat well.
  3. Combine dry ingredients in a seperate bowl and whisk to combine.
  4. Gradually add dry ingredients and milk to creamed mixture, alternating between dry ingredients and milk.
  5. Grease a 8x8 or 9x9 square baking pan. Spread batter evenly and bake for 20-25 minutes. Cool completely on a wire rack.
  6. Top with whipped cream and strawberries. Enjoy!
